I prefer to keep Dashboard turned off. I only turn it on when I run a System Update/Security Update. My machine is rather RAM-limited, and I'd rather not accidentally activate Dashboard and suffocate the OS through an "out of memory"-type error. I did that once on my GNU/Linux box, and I swear you could hear me scream all the way to St. Petersburg (quite a feat, considering I live in Hannover, Germany. Compling custom kernels can be fun, but.....).
Anyway, when I get more RAM, I'll probably just run the Calculater, Wikipedia, Sticky Notes and iStat. They're all I'd need.
(NOTE: If this is defined as (too far) off-topic, I apologize and I'll delete it when I get the Mod's PM telling me so.)

Dashboard won't cause an out of memory error. OS X's swap functionality is a bit safer than linux's

I swear, I can troubleshoot a PC into the ground but I confuse myself to hell not knowing commands for mac
