I got home late from Montreal. I also woke up late this morning. I’ll be posting a rant about the trip and will post AG Lite once I get the script.

I actually would recommend my college cafeteria’s variations on it. Substitute nacho cheese or queso for gravy and/or blue cheese or motzarella crumbles for curds.
Think of poutine as mashed potatoes with gravy; only the potatoes were deep fried instead of boiled and instead of adding salt, milk and butter, they sprinkled on some fresh cheese. Same basic ingredients, different preparation/presentation. Both are trés yummy.
See, if they were thinking, they would’ve had a nice big plate of poutine waiting for you right when the sun went down.
